Homemade Everything Bagels

Have you ever really read bread/bagel labels? They include numerous ingredients and preservatives. Why not make your own? With a few simple ingredients you can make delicious, nutritious, and totally customizable bagels. We like to make everything bagels, but you could easily substitute the Everything Bagel Seasoning for cheese, sesame seeds, or incorporate cinnamon and raisens or dried bluberries for a sweeter bagel.


Ingredients:

1 c. warm water

1 TBSP sugar

3 c. all-purpose flour

1 1/2 tsp. yeast

1/2 tsp. salt

1 egg


Directions:

  1. Whisk the warm water and yeast together in the bowl of your stand mixer fitted with a dough hook attachment. Cover and allow to sit for 5 minutes. You may mix by hand with a wooden spoon or silicone spatula if you prefer instead.

  2. Add the flour, sugar, and salt. Beat on low speed for 2 minutes. The dough is very stiff and will look somewhat dry.

  3. Keep the dough in the mixer and beat for an additional 6-7 minutes, or knead by hand on a lightly floured surface.

  4. Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl and allow it to rise at room temperature until it doubles in size. Roughly 1-1.5 hours.

  5. When the dough is ready, punch it down to release any air bubbles. Divide the dough into 6 equal pieces. Shape each piece into a ball. Use your fingers to work a hole through the center of each ball roughly 1.5-2 inches in diameter. Cover and allow to rest for 20 minutes.

  6. Preheat oven to 425°F. While your oven is preheating fill a large pot with 2 quarts of water. Bring water to a boil, then reduce heat to medium-high. Drop bagels in, 2-4 at a time, making sure they have enough room to float around. Allow them to boil for 1 minute. Do not flip the bagels.

  7. After removing from water place back on baking sheet. Using a pastry brush, brush the egg wash on top and around the sides of each bagel. Sprinkle with Everything Bagel Seasoning, or desired topping.

  8. Bake for 20-25 minutes, until bagels are a golden brown on top.
