Enjoy this Italian-style tomato and bean dip as a side dish, an appetizer, or your main course. This recipe leaves a lot of room for additions and substitutions. When your vegetable garden starts bearing fruit, try adding other vegetables and herbs to really make it your own.
Ingredients:
1 can Omena Organics white beans (order here)
2 cans of stewed tomatoes (1 quart if using home canned)
1 large handful of spinach
1 Tbsp. garlic
1/2 tsp. Italian seasoning
2 c. Mozzarella cheese
salt & pepper to taste
fresh parsley optional
Put tomatoes in a pan and warm thoroughly until they begin to bubble. Add remaining ingredients and cook until heated through, spinach is wilted, and cheese is melted. Add salt and pepper to taste, and top with fresh parsley if you wish. Serve with toasted bread or Naan if you prefer.
